Green Bean Casserole
You can use any green beans for this. Be sure to pass runner beans through a Krisk bean slicer before using to remove strings. Even thinking about bean strings causes me disturbance in the middle region. Fry a chopped onion and some chopped garlic in olive oil until golden, add plenty of beans and saute for a minute or two until slightly softened. Add chopped tomatoes or a tin of organic tomatoes with salt and pepper. Cover and cook until beans are cooked through. It might need some lemon juice and a little more seasoning. Serve it with chickpeas and rice (see Chickpeas and rice recipe).
