Angel's Hair

This is a weird and wonderful jam made of carrots - think carrot cake as a taste reference. Trim and scrape your organic carrots. Grate on a medium sized grater - the Magimix grater is wonderful for this, just the right long, stringy texture - until you have 8oz. Put into a pan with 8oz of caster sugar, lemon zest cut into strips, and its juice, and 3 split cardamom pods. Heat gently until the sugar dissolves, then boil hard until he mixture is very thick. Pack into a warmed, sterilised jar and seal tightly. Very good served as a pudding with cream cheese or thick, strained yoghurt and thin crispy biscuits.
